  • 1 pound ground beef
  • 4 medium potatoes, sliced Slice evenly for even cooking
  • 1 can cream of mushroom soup Can swap for cream of chicken or celery
  • 1 cup shredded cheese Use your favorite cheese
  • 1 onion, chopped onion, chopped For flavor
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, brown the ground beef with the chopped onion until cooked through. Drain any excess fat.
  • In a baking dish, layer half of the sliced potatoes, then half of the ground beef mixture.
  • Spread half of the cream of mushroom soup over the beef layer.
  • Repeat with the remaining potatoes, beef, and soup.
  • Top with shredded cheese.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes or until the potatoes are tender and the cheese is bubbly.

Notes

Cool the casserole to room temperature and store in airtight containers for up to 3-4 days. Reheat in the oven or microwave. Slices hold together best when allowed to sit for 5 minutes before serving.
