Ingredients
  

For the filling

  • 4 cups blackberries (fresh or thawed frozen) Fresh blackberries yield the best flavor.
  • 1/2 cup granulated sugar (for berries) Adjust sweetness according to preference.
  • 1 tablespoon cornstarch Helps to thicken the berry mixture.
  • 1 tablespoon lemon juice (optional) Adds a hint of acidity to balance sweetness.

For the batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar (for batter)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt Enhances flavors.
  • 1 cup milk Use whole milk for richer flavor.
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted Make sure it's cooled slightly before adding.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a bowl, mix the blackberries with 1/2 cup sugar, cornstarch, and optional lemon juice. Set this mixture aside.
  • In another bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Add in the milk and vanilla extract, stirring until smooth.

Assembly

  • Pour the melted butter into the prepared baking dish.
  • Carefully pour the batter over the melted butter without stirring.
  • Spoon the blackberry mixture evenly over the batter, making sure not to mix them.

Baking

  • Bake the cobbler for 40-45 minutes, until the top is golden and the berries are bubbling.
  • Let cool slightly before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for 3-5 days. Reheat before serving.
