  • 2 pieces boneless, skinless chicken breasts Use lean chicken for best results.
  • 4 cups chicken broth Low-sodium broth can help control saltiness.
  • 2 pieces carrots, diced Fresh carrots add sweetness.
  • 2 pieces celery stalks, diced Add flavor and texture.
  • 1 piece onion, chopped Provides a savory base.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish Use at service.

Cooking Steps

  • In a pot, add the chicken breasts and cover with the chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes until the chicken is cooked through.
  • Remove the chicken breasts and shred them with two forks.
  • In the same pot, add the carrots, celery, onion, and garlic. Cook for 5–7 minutes until the vegetables are tender.
  • Add the shredded chicken back into the pot along with thyme, parsley, salt, and pepper. Cook for an additional 5 minutes.
  • Serve hot, garnished with fresh herbs.

Notes

For the best results, taste and adjust the salt at the end. You can add frozen peas or corn for more texture in the last 2 minutes of cooking. This soup pairs well with crusty bread or a green salad.
