Ingredients
  

Dough Ingredients

  • 2 and 1/4 tsp active dry yeast
  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water Must be warm but comfortable to touch
  • 4 and 1/2 cups flour Can add more if dough is sticky
  • 1/4 cup olive oil
  • 2 tsp salt

Boiling Solution

  • 6 cups water
  • 2 tbsp baking soda Important for the boiling step

Toppings

  • 1 each egg (for egg wash)
  • Coarse salt (for topping)
  • Everything but the bagel seasoning (for topping)

Instructions
 

Preparation

  • Combine warm water, yeast, and sugar in a bowl. Whisk and let sit for 5-10 minutes until foamy.
  • Add flour, olive oil, and salt to the bowl. Knead for about five minutes until the dough forms a ball.
  • Drizzle olive oil on the dough, place back in the bowl, cover with a damp cloth, and let rise in a warm place for about an hour until doubled in size.
  • After rising, punch the dough down and cut into 12 even pieces.
  • Roll each piece into a rope about 18-24 inches long and shape it into a pretzel.

Cooking

  • Preheat your oven to 450°F.
  • Boil water and baking soda in a large pot. Dip each pretzel in water for 15-30 seconds.
  • Transfer pretzels to a parchment-lined baking sheet, brush with egg wash, and sprinkle with salt and seasoning.
  • Bake for 10-11 minutes until golden brown.
  • Let cool on a wire rack and serve warm.

Notes

Serve with cheese dip, mustard, or sweet dips like chocolate. Store in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
