Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Sauce Ingredients

  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water Used for thickening the sauce.

Optional Ingredients

  • Toasted sesame seeds for garnish Optional, for garnish.
  • Cooked white or brown rice Optional, for serving.

Instructions
 

Cooking Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Season the chicken cubes with salt and pepper, then add them to the skillet. Cook until the chicken is browned and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set aside.

Cooking Broccoli

  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp.

Making the Sauce

  • In a small mixing bowl, whisk together honey, soy sauce, apple cider vinegar, and minced garlic.
  • Return the cooked chicken to the skillet with the broccoli. Pour the honey garlic sauce over the chicken and broccoli mixture.
  • Bring the sauce to a simmer over medium heat. Once simmering, stir the cornstarch mixture into the sauce to thicken it, cooking for about 1-2 minutes.
  • Toss the chicken and broccoli in the thickened sauce until well coated.

Notes

Serve hot over cooked rice. For added flavor, marinate the chicken in the honey garlic sauce for 30 minutes before cooking. You can also add other vegetables like bell peppers or snap peas for variety.
