Huckleberry’s Breakfast & Lunch Recipe

Inspired by classic comfort food from Huckleberry's restaurants, this hearty Breakfast & Lunch Skillet features crispy potatoes, savory sausage, fluffy scrambled eggs, and melty cheese—all topped with a touch of fresh herbs and optional gravy. It’s the kind of meal that satisfies any time of day.

Ingredients
  

For the Skillet:

  • 4 medium russet potatoes diced
  • 1 tablespoon olive oil
  • ½ pound breakfast sausage or bacon/ham
  • 6 large eggs
  • ¼ cup milk or cream
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ bell pepper diced
  • ¼ small red onion diced
  • 2 tablespoons butter
  • Salt & pepper to taste
  • Fresh parsley or green onions for garnish

Optional Sausage Gravy (Bonus):

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • ¼ pound ground breakfast sausage
  • Salt & pepper to taste

Instructions
 

Cook the Potatoes

  • Heat olive oil in a large skillet over medium heat.
  • Add diced potatoes, season with salt and pepper, and cook until crispy and golden brown, about 12–15 minutes, stirring occasionally.
  • Remove from skillet and set aside.

Cook the Sausage

  • In the same skillet, cook breakfast sausage until browned and fully cooked. Break into crumbles.
  • Add chopped bell pepper and onion. Sauté for 3–4 minutes until softened.

Scramble the Eggs

  • In a bowl, whisk eggs with milk, a pinch of salt, and pepper.
  • Push sausage and veggies to the side of the skillet, melt in butter, and pour in the eggs.
  • Cook, gently stirring, until eggs are just set.

Combine & Top with Cheese

  • Add potatoes back to the skillet, mixing everything gently.
  • Sprinkle cheese on top and cover for 1–2 minutes until melted.

Optional: Make Gravy

  • In a small saucepan, brown sausage. Remove and set aside.
  • Melt butter, whisk in flour to form a roux, then slowly add milk while whisking.
  • Return sausage, season with salt and pepper, and simmer until thickened.

Notes

To Serve

  • Serve hot in individual bowls or straight from the skillet.
  • Drizzle with sausage gravy if using.
  • Garnish with fresh parsley or green onions.
  • Add toast or a biscuit on the side for the full Huckleberry’s experience.
