For the Roll-Ups:
- 12 lasagna noodles regular, not oven-ready
- 12 –15 small Italian-style meatballs homemade or frozen and thawed
- 2 cups marinara sauce homemade or store-bought
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
For the Ricotta Cheese Filling:
- 1 1/2 cups ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt & pepper to taste
Preheat Oven & Cook Pasta
Mix the Cheese Filling
In a medium bowl, combine ricotta, mozzarella, Parmesan, egg, Italian seasoning, garlic powder, salt, and pepper. Stir until fully blended.
Assemble the Roll-Ups
Spread a thin layer of marinara on the bottom of a 9x13-inch baking dish.
On each noodle, spread 2–3 tablespoons of the cheese mixture evenly.
Place 1 meatball (or 1.5 if small) on one end of each noodle.
Roll up the noodles starting from the meatball end and place seam-side down in the baking dish.
