  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1 egg
  • Oil for frying Ensure oil is hot before frying

Preparation

  • In a bowl, mix together the corn, chopped jalapeño, flour, baking powder, and salt.
  • In another bowl, whisk together the buttermilk and egg until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients, and stir until everything is combined.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil, frying until they are golden brown on both sides.
  • Remove the fritters from the oil and let them drain on paper towels.

Notes
