Apple Filling

  • 6 medium medium apples (such as Granny Smith or Golden Delicious), peeled and sliced 1/4 inch thick
  • 1 cup water or apple juice
  • 1/3 cup packed brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon salt

Cobbler Topping

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 5 tablespoons melted butter
  • ground cinnamon, for sprinkling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan lightly with cooking spray or butter.
  • In a medium saucepan, combine the packed brown sugar, water or apple juice, cornstarch, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and salt. Stir well to dissolve the cornstarch.
  • Add the peeled and sliced apples and cook over medium heat for 3–5 minutes, stirring gently until the apples begin to soften and the mixture thickens.

Assembly

  • Pour the cooked apple filling evenly into the prepared baking pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until just combined.
  • Pour the batter evenly over the apples and sprinkle the top lightly with ground cinnamon.

Baking

  • Transfer the pan to the preheated oven and bake for about 38–40 minutes, until the topping is golden brown and a toothpick comes out clean.
  • Remove from the oven and allow it to cool for at least 15 minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream. Store in an airtight container in the refrigerator for up to 4 days.
