  • 2 oz coconut rum
  • 1 oz pineapple juice
  • 1 oz coconut cream
  • 1/2 cup key lime juice Use fresh when possible for best flavor.
  • 1/4 cup cream cheese Soften slightly before blending.
  • 1 cup ice cubes Use plenty for a thick texture.
  • Whipped cream for topping
  • Lime zest for topping

For the rim

  • Graham cracker crumbs for the rim
  • Lime juice for the rim

Instructions
 

Preparation

  • Dip the rim of the glass in lime juice, then coat it with graham cracker crumbs.
  • Add coconut rum, pineapple juice, coconut cream, key lime juice, cream cheese, and ice to a blender. Blend until smooth and creamy.
  • Pour the mixture into the prepared glass.
  • Top with whipped cream and lime zest.

Notes

For a non-alcoholic version, skip the rum and add extra pineapple juice or a splash of coconut water. Store any leftovers in a sealed container in the fridge for up to 24 hours or freeze for up to one month.
