  • 1/2 cup unsalted butter, melted Ensure butter is melted for even texture.
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk

Topping

  • 1 can lemon pie filling (21 oz) or homemade lemon curd Homemade lemon curd can add a personal touch.
  • Zest of 1 lemon Optional for extra flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Pour the melted butter into a 9×13-inch baking dish.
  • In a bowl, whisk together the flour, sugar, baking powder, and salt.
  • Stir in the milk until the mixture is smooth.
  • Pour the batter over the melted butter in the baking dish. Do not stir it together.
  • Spoon the lemon pie filling evenly on top of the batter.

Baking

  • Bake for 35–40 minutes, or until the cobbler is golden and bubbly.
  • Let it cool slightly before serving warm.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. Garnish with fresh lemon zest for extra flavor. Store leftovers in the refrigerator for up to 3 days. It can be made ahead of time, but assemble and bake it just before serving for the best flavor. You can also freeze it for up to 2 months and reheat before serving.
