Ingredients
  

For the crust

  • 2 1/4 cups Shortbread cookie crumbs
  • 3 Tbsp Unsalted butter, melted

For the lemon filling

  • 1 cup Sugar
  • 4 large Egg yolks
  • 1/2 cup Fresh lemon juice
  • 1 Tbsp Lemon zest

For the meringue topping

  • 4 large Egg whites
  • 1/4 tsp Cream of tartar
  • 1/2 cup Sugar for meringue

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the shortbread cookie crumbs and melted butter until combined.
  • Press the mixture into the bottom of a baking dish to form the crust.
  • Bake for 10-12 minutes until lightly golden.
  • In another bowl, whisk together sugar, egg yolks, lemon juice, and lemon zest.
  • Pour the filling over the baked crust.

Meringue Topping

  • In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.
  • Gradually add sugar and continue beating until stiff peaks form.
  • Spread the meringue over the lemon filling.

Final Baking

  • Bake for an additional 10-15 minutes until the meringue is lightly browned.
  • Let cool before cutting into bars and serving.

Notes

Once cooled, cut the bars into squares and serve them chilled or at room temperature. They pair well with whipped cream or a scoop of vanilla ice cream. Store in an airtight container in the fridge for freshness. Use fresh lemons for the best flavor.
