Instructions
 

  • Prepare the Chicken:
  • In a small bowl, combine the lime juice, lime zest, olive oil, minced garlic, cumin, chili powder, salt, and pepper. Stir well.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 15 minutes (or up to 2 hours for more flavor).
  • Make the Mango Salsa:
  • In a medium bowl, combine the diced mango, red onion, red bell pepper, cilantro, and lime juice. Season with salt and pepper to taste. Stir gently and set aside to allow the flavors to meld.
  • Cook the Chicken:
  • Heat a grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade and discard any excess marinade.
  • Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  • Remove the chicken from the grill and let it rest for a few minutes.
