  • 4 large large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream Can swap for half-and-half or milk for a lighter version.
  • 1 cup shredded cheddar cheese Use a good sharp cheddar for better flavor.
  • 1/2 cup cooked bacon, crumbled Smoked bacon can be swapped for turkey bacon.
  • 1 teaspoon garlic powder Add roasted or fresh minced garlic for more flavor.
  • Salt and pepper to taste Adjust at the end as cheese and bacon add saltiness.
  • Chives or green onions for garnish

Preparation

  • In a large pot, add the diced potatoes, chopped onion, and the broth. Bring to a boil.
  • Reduce the heat and simmer until the potatoes are tender, about 15–20 minutes.
  • Mash some of the potatoes in the pot with a potato masher or use a hand blender for a thicker, creamier texture.
  • Stir in the heavy cream, garlic powder, salt, and pepper. Heat until warmed through.
  • Serve hot and top each bowl with shredded cheddar, crumbled bacon, and chopped chives or green onions.

Notes

For casual family meals, place bowls on the table with extra toppings for customization. Store leftovers in airtight containers and consume within 3-4 days. Reheat with added broth or cream if thickened.
