Luxurious Dubai Chocolate Bar Recipe

  • Double boiler (or saucepan for steaming)
  • Silicone spatula
  • Chocolate molds (silicone or polycarbonate)
  • Thermometer (for tempering chocolate)

  • Cooling rack or tray

Ingredients
  

  • 300 g dark chocolate 70% cocoa
  • 100 g milk chocolate
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon rose water
  • 2 tablespoons chopped pistachios
  • 2 tablespoons chopped almonds
  • 2 tablespoons dried fruits dates, figs, or apricots
  • Edible gold leaf optional

Instructions
 

Step 1: Prepare the Ingredients

  • Chop the dark and milk chocolate into small, even pieces for easy melting.
  • Measure and set aside the cardamom, rose water, nuts, and dried fruits.

Step 2: Melt the Chocolate

  • Use a double boiler: Place the heatproof bowl over a saucepan of simmering water. Ensure the bowl doesn’t touch the water.
  • Alternatively, microwave the chocolate in 30-second intervals, stirring in between, until smooth.
  • Heat gently, stirring constantly, until fully melted.

Step 3: Temper the Chocolate

  • Allow the melted chocolate to cool slightly to about 27°C (80°F).
  • Reheat gently to 31°C (88°F) to achieve a glossy, tempered finish.

Step 4: Add Flavors

  • Mix in the ground cardamom and rose water for a fragrant, luxurious flavor.
  • Stir until evenly combined.

Step 5: Fill and Decorate the Molds

  • Pour the flavored chocolate into the molds, spreading evenly.
  • Gently tap the molds to remove air bubbles.
  • Sprinkle pistachios, almonds, and dried fruits on top.
  • Apply edible gold leaf if desired for a touch of opulence.

Step 6: Set the Chocolate

  • Place the molds on a cooling rack or tray.
  • Allow the chocolate to set at room temperature for 1–2 hours, or refrigerate for 30 minutes.

Step 7: Unmold and Enjoy

  • Once set, carefully pop the chocolate bars out of the molds.
  • Wrap in decorative packaging for gifting or enjoy immediately!
