Ingredients
  

Meatloaf Mixture

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup ketchup Different sauces can be used as toppings.
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper To taste

Whipped Potato Topping

  • 2 cups mashed potatoes Customize with butter, cheese, or herbs for more flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the ground beef, breadcrumbs, egg, ketchup, milk, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined.
  • Line a muffin tin with paper liners.
  • Spoon the meat mixture into each cup, filling them about 2/3 full.

Baking

  • Bake for 20-25 minutes until they are cooked through.

Topping and Serving

  • While the meatloaf cupcakes are baking, whip the mashed potatoes until creamy.
  • Once the cupcakes are done, remove them from the oven and top each one with a generous dollop of whipped potatoes.
  • Serve warm, optionally adding a side of steamed vegetables or a fresh salad.

Notes

Let leftovers cool to room temperature and store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving. They are also great for parties or family gatherings.
