  • 2 lbs beef chuck roast Best for slow cooking.
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 leaves bay leaves
  • 2 tbsp chili powder Adjust for spice preference.
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 tsp cinnamon
  • 1 cup beef broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Corn tortillas for tacos
  • Chopped onions and cilantro for serving

Preparation

  • In a crockpot, combine beef, garlic, onion, bay leaves, chili powder, cumin, oregano, cinnamon, beef broth, diced tomatoes, salt, and pepper.
  • Cover and cook on low for 8 hours or until the beef is tender.
  • Remove the beef and shred it.
  • Strain the broth to serve as consomme.
  • To serve as tacos, fill corn tortillas with shredded beef and top with onions and cilantro, drizzling with the consomme.

Notes

Brown the beef first in a hot pan for extra flavor if you have time. Adjust salt or spices in the broth before serving. For added spice, include crushed red pepper or jalapeƱo.
