  • 1 lb cooked shrimp, peeled and deveined Use fresh shrimp for the best flavor.
  • 1 cup tomato juice
  • 1/2 cup fresh lime juice Taste and adjust according to preference.
  • 1/2 cup ketchup
  • 1/2 cup finely chopped white onion
  • 1/2 cup chopped fresh cilantro
  • 1 medium cucumber, peeled and diced
  • 2 medium tomatoes, seeded and diced

Preparation

  • In a large bowl, combine the tomato juice, lime juice, ketchup, chopped onion, cilantro, cucumber, and diced tomatoes.
  • Add the cooked shrimp and gently mix until everything is well coated.
  • Refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

  • Serve chilled in individual bowls or glasses, garnished with lime wedges and fresh cilantro.
  • Pair with tortilla chips or avocado slices.

Notes

To store, keep in an airtight container in the refrigerator for up to 2 days. Best enjoyed the same day it's made. You can add diced avocado for creaminess or spicy jalapeƱos for a kick.
