Ingredients
  

For the filling

  • 15 oz ricotta cheese Drain well if watery.
  • 1 cup powdered sugar Adjust as needed.
  • 1 teaspoon vanilla extract For flavor.
  • 1/2 cup mini chocolate chips Add last to avoid melting.

For assembly

  • 1 package mini phyllo pastry shells Use store-bought for convenience.
  • as needed chopped pistachios For garnish.

Preparation

  • In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
  • Fold in the mini chocolate chips.
  • Spoon the mixture into the mini phyllo pastry shells.
  • Garnish with chopped pistachios on top.
  • Serve immediately or refrigerate until ready to serve.

Notes

Store filled cups in an airtight container in the refrigerator for 2-3 days. For crisp shells, store shells and filling separately and fill just before serving.
