Ingredients
  

For the crust

  • 12 cookies chocolate sandwich cookies (like Oreos) Crushed into fine crumbs
  • 2 tablespoons melted butter To combine with cookie crumbs

For the filling

  • 8 oz cream cheese, softened At room temperature for easy mixing
  • 1/4 cup granulated sugar
  • 1 large egg

Preparation

  • Preheat your oven to 325°F (160°C).
  • Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter.
  • Press the mixture into the bottom of a mini muffin tin.
  • In a bowl, beat the cream cheese and sugar together until smooth.
  • Add the egg and mix until fully incorporated.
  • Pour the cream cheese mixture over the cookie crusts in the muffin tin.
  • Bake for 15-20 minutes or until set.
  • Let cool, then refrigerate before serving.

Notes

Best served chilled. Use cupcake liners for a nice presentation. Store in an airtight container for 5-7 days, or freeze for longer storage.
