Ingredients
  

For the crust

  • 1.5 cups chocolate cookie crumbs Any chocolate cookies can be used.
  • 0.5 cups unsalted butter, melted

For the filling

  • 1 cup powdered sugar Adjust for sweetness if desired.
  • 8 oz cream cheese, softened Ensure cream cheese is softened for easy mixing.
  • 1 cup chocolate pudding mix Can use store-bought chocolate pudding.
  • 2 cups milk

For the topping

  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • to taste Chocolate shavings For garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the chocolate cookie crumbs with the melted butter.
  • Press this mixture into the bottom of a pie pan to create the crust.
  • Bake for 10 minutes, then let it cool.
  • In another bowl, beat the cream cheese with the powdered sugar until it is smooth.
  • In a separate bowl, whisk the chocolate pudding mix with the milk until it thickens.
  • Mix the pudding into the cream cheese mixture until well combined.

Assembly

  • Pour the filling into the cooled crust and smooth the top.
  • In a new bowl, whip the heavy cream with the sugar until you achieve soft peaks.
  • Spread the whipped cream over the chocolate filling.
  • Finish by sprinkling chocolate shavings on top.
  • Refrigerate the pie for at least 2 hours before serving.

Notes

Store in the refrigerator covered with plastic wrap or in an airtight container for 3 to 4 days. For gluten-free, use gluten-free chocolate cookies. Can be frozen for a few weeks.
