Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan.
  • Mash the ripe bananas in a bowl.
  • Mix in the sugar and melted butter.
  • Beat the eggs and add them to the mixture.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually fold the dry ingredients into the banana mixture until just combined.
  • Stir in the vanilla if using.
  • Pour the batter into the greased loaf pan.

Baking

  • Bake for 50–60 minutes or until a toothpick comes out clean.
  • Let it cool before slicing.

Notes

Slice it warm with a pat of butter, or spread cream cheese for a tangy contrast. Store wrapped in foil for 2–3 days at room temperature or in an airtight container for up to a week; freeze for up to 3 months.
