For the Meatloaf:
- 1.5 lbs lean ground beef or turkey
- 1/2 cup rolled oats or whole wheat breadcrumbs
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1 carrot grated
- 1 egg
- 1/4 cup milk
- 2 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped fresh parsley optional
For the Glaze:
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar optional
Mix the Meatloaf
In a large bowl, combine ground beef, oats or breadcrumbs, onion, garlic, grated carrot, egg, milk, Worcestershire sauce, oregano, salt, pepper, and parsley. Mix well using your hands or a spoon until just combined — don’t overmix.
Prepare the Glaze
In a small bowl, whisk together ketchup, brown sugar, mustard, and vinegar. Spread half of the glaze over the top of the meatloaf.
Bake
Bake uncovered for 45 minutes. Remove from oven, spread the remaining glaze, and bake for another 10 minutes, or until internal temperature reaches 160°F (71°C).
