Ingredients
  

For the Meatloaf:

  • 1.5 lbs lean ground beef or turkey
  • 1/2 cup rolled oats or whole wheat breadcrumbs
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot grated
  • 1 egg
  • 1/4 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped fresh parsley optional

For the Glaze:

  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar optional

Instructions
 

Preheat Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x5-inch loaf pan or line it with parchment paper.

Mix the Meatloaf

  • In a large bowl, combine ground beef, oats or breadcrumbs, onion, garlic, grated carrot, egg, milk, Worcestershire sauce, oregano, salt, pepper, and parsley. Mix well using your hands or a spoon until just combined — don’t overmix.

Form the Loaf

  • Transfer the meat mixture into the loaf pan and shape it evenly. Smooth the top with a spoon.

Prepare the Glaze

  • In a small bowl, whisk together ketchup, brown sugar, mustard, and vinegar. Spread half of the glaze over the top of the meatloaf.

Bake

  • Bake uncovered for 45 minutes. Remove from oven, spread the remaining glaze, and bake for another 10 minutes, or until internal temperature reaches 160°F (71°C).

Rest and Serve

  • Let the meatloaf rest for 5–10 minutes before slicing. This helps retain moisture and makes serving easier.
