Main Ingredients

  • 4 cups diced cooked chicken Rotisserie chicken works great.
  • 1 cup sour cream Can substitute Greek yogurt.
  • 1 can cream of chicken soup
  • 2 cups sharp Cheddar cheese, shredded
  • 1/2 cup sliced almonds Do not skip these for added texture.

Topping

  • 1 cup crushed Ritz crackers For a crispy finish.
  • 2 tablespoons butter, melted For mixing with the crushed crackers.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Shred or chop the cooked chicken and place it in a mixing bowl.
  • Add sour cream, cream of chicken soup, and shredded Cheddar cheese to the bowl and mix until well combined.
  • Spread the chicken mixture evenly in a baking dish.
  • Sprinkle sliced almonds over the chicken mixture.

Topping

  • In a small bowl, mix melted butter with crushed Ritz crackers until combined.
  • Spread the cracker mixture evenly over the top of the casserole.

Baking

  • Bake the casserole in the preheated oven for 30 to 35 minutes, or until the top is bubbly and golden.
  • Let it sit for a few minutes before serving.

Notes

This casserole pairs well with garlic green beans, buttered corn, or a light salad. You can also serve it with mashed potatoes or throw it over buttered noodles for a satisfying meal.
