Ingredients
  

For the Graham Cracker Crust

  • 1.25 cups 1 ¼ cups of graham cracker crumbs
  • 0.25 cups ¼ cup of unsalted butter, melted
  • 0.25 cups ¼ cup of white sugar

For the Filling

  • 1 package 1 (8-ounce) package of softened cream cheese
  • 1 cups 1 cup of powdered sugar
  • 1 teaspoon 1 teaspoon of vanilla extract
  • 1 cups 1 cup of heavy whipping cream
  • 1 can 1 (12.5-ounce) can of cherry pie filling or other filling of your choice

Preparation

  • Combine graham cracker crumbs, melted butter, and sugar in a bowl until well mixed and crumbly. Press the mixture into a 9-inch pie plate, spreading it evenly along the bottom and up the sides.
  • In a bowl, use an electric mixer to beat the cream cheese, powdered sugar, and vanilla until smooth and spreadable.
  • In a chilled glass or metal bowl, whip the heavy cream with an electric mixer until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fully combined.
  • Pour the filling into the prepared crust. Use a spatula to smooth and level the top. Refrigerate the pie for 2 to 3 hours, or until firm.
  • Spread the cherry pie filling over the top of the chilled cheesecake. Serve immediately or refrigerate until ready to enjoy.

Notes

No baking required — ideal for hot days or quick preparation. The dessert is customizable with any pie filling such as blueberry, strawberry, lemon, or mixed berry. A perfect make-ahead dessert for gatherings.
