Ingredients
  

For the Oreo Crust

  • 24 pieces Oreo Cookies Use the standard variety with the cream filling intact.
  • 5 tbsp Melted Butter Use unsalted butter for better control over salt levels.

For the Cheesecake Filling

  • 2 cups Cream Cheese Must be at room temperature.
  • 1 cup Powdered Sugar Sifted to eliminate graininess.
  • 1 tsp Vanilla Extract To enhance creaminess.
  • 1.5 cups Heavy Whipping Cream Must be ice-cold.
  • 10 pieces Crushed Oreo Cookies For speckled interior.

For the Ganache & Topping

  • 1 cup Semi-Sweet Chocolate Chips Balances the sweetness of the cookies.
  • 0.5 cup Heavy Cream For a pourable, glossy finish.
  • Whipped cream swirls, whole Oreos, and extra crumbs For decoration.

Instructions
 

Engineering the Perfect Crust

  • Pulse 24 Oreos in a food processor until fine crumbs.
  • Mix the crumbs with melted butter until combined.
  • Firmly press the mixture into the bottom of a 9-inch springform pan.
  • Chill in the refrigerator for 30 minutes.

Crafting the Cloud-Like Filling

  • Beat room-temperature cream cheese until smooth and fluffy.
  • Add sifted powdered sugar and vanilla, whisking until combined.
  • In a separate chilled bowl, whip cold heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Fold in crushed Oreos and spread the filling over the chilled crust.
  • Refrigerate for 4-6 hours or overnight.

The Chocolate Drip

  • Warm the cream until it begins to simmer.
  • Pour over chocolate chips and let it sit for two minutes before stirring until smooth.
  • Cool slightly, then pour over the cheesecake, allowing it to drip down the sides.

Decoration and Final Set

  • Pipe swirls of whipped cream around the perimeter.
  • Place whole Oreos on the swirls and sprinkle extra cookie crumbs on top.
  • Chill for an additional 15-20 minutes to set the ganache.

Notes

For a gluten-free version, substitute regular Oreos with gluten-free Oreos. Be cautious about the temperature of the ingredients for best results.
