Ingredients
  

Crust

Instructions
 

Preparation of Crust

  • In a bowl, combine the crushed Oreo cookies and melted butter until evenly coated.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Refrigerate while preparing the filling.

Preparation of Filling

  • In a large bowl, beat the cream cheese until smooth and creamy.
  • Mix in the melted chocolate, powdered sugar, and vanilla extract until rich and silky.
  • In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  • Fold the whipped cream gently into the chocolate cheesecake mixture until light and fluffy.
  • Fold in the crushed Oreo cookies.

Assembly and Chilling

  • Spread the filling evenly over the chilled Oreo crust and smooth the top.
  • Refrigerate for at least 6 hours or overnight until fully set.

Ganache Preparation

  • For the ganache, heat the heavy cream until hot but not boiling.
  • Pour over the chocolate chips and let sit for 2 minutes, then stir until glossy and smooth.
  • Pour the chocolate ganache over the chilled cheesecake, letting it drip down the sides.
  • Decorate with whole Oreo cookies, chocolate drizzle, and mini chocolate chips.
  • Chill for another 20-30 minutes before slicing.

Notes

Serve with optional toppings like whipped cream or fresh strawberries for added flavor. Store leftovers tightly covered in the refrigerator for up to 5 days, or freeze for up to a month.
