  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Optional, adjust to taste.
  • 1 pinch salt

Wet Ingredients

  • 2 grated or mashed apples You may substitute apples with other fruits like pears.
  • 2 grated carrots Make sure to grate finely for even baking.
  • 3 eggs Can substitute with flax eggs for vegan version.
  • 1/2 cup honey or crushed dates Adjust sweetness based on taste.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a bowl, combine the oats, baking powder, cinnamon, and salt.
  • In another bowl, mix the grated apples, grated carrots, and eggs (or vegan substitution).
  • Add honey (or crushed dates) to the wet mixture.
  • Combine the wet and dry ingredients until just mixed.

Baking

  • Pour the batter into the prepared cake pan and smooth it out.
  • Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  • Let cool before serving.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Freeze slices for up to three months.
