Ingredients

For the Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk or buttermilk for extra fluffiness
  • 1 large egg
  • 2 tablespoons melted butter plus extra for greasing the skillet
  • 1 teaspoon vanilla extract
  • 6-8 Oreo cookies crushed

For the Oreo Drizzle (Optional):

  • 4 Oreo cookies finely crushed
  • 1/2 cup powdered sugar
  • 2 tablespoons milk adjust for desired consistency
  • 1/4 teaspoon vanilla extract

Instructions

Prepare the Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Mix the Wet Ingredients:

  • In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Beat until well combined.

Combine Wet and Dry Mixtures:

  • Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; the batter should be slightly lumpy. Fold in the crushed Oreos.

Heat the Skillet:

  • Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

Cook the Pancakes:

  • Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes or until golden brown.

Make the Oreo Drizzle (Optional):

  • In a small bowl, whisk together the crushed Oreos, powdered sugar, milk, and vanilla extract until smooth. Add more milk for a thinner consistency if needed.

Assemble and Serve:

  • Stack the pancakes on a plate, drizzle with the Oreo topping, and garnish with extra crushed Oreos for a finishing touch. Serve warm and enjoy!

Notes

Pro Tips:
  • For a richer flavor, substitute half the milk with chocolate milk.
  • Add a scoop of whipped cream or a dollop of vanilla ice cream on top for an extra indulgence.
  • Try experimenting with flavored Oreos for fun variations!
