Ingredients
  

For the peaches

  • 5-6 pieces fresh peaches, peeled and sliced (about 5 cups) Use ripe but firm peaches.
  • 1/2 cup sugar (for peaches) Add more if peaches are very tart.
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

For the batter

  • 1 cup all-purpose flour Can be substituted with gluten-free blend.
  • 1 cup sugar (for the dough)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk Adjust quantity for a thicker batter.
  • 1/2 cup unsalted butter, melted For a richer flavor, try browning the butter.
  • 1 teaspoon ground cinnamon (optional) For sprinkling on top.

Instructions
 

Preparation

  • In a bowl, mix the sliced peaches with 1/2 cup sugar, lemon juice, and vanilla. Set aside.
  • In another bowl, mix the flour, 1 cup sugar, baking powder, and salt. Add milk and stir until smooth.

Assembly

  • Pour the melted butter into a greased baking dish.
  • Pour the batter on top — do not mix the butter into the batter.
  • Spread the peaches and their juice evenly over the batter.

Baking

  • Bake at 180°C (350°F) for 35-40 minutes, until the top is golden brown and the filling is bubbly.

Serving

  • Serve warm with vanilla ice cream or whipped cream.

Notes

Cover loosely at room temperature and eat within 1 day. Refrigerate for up to 3-4 days. Freeze in a container for up to 2 months.
