  • 4 slices cheese (e.g., mozzarella or cheddar) Experiment with different cheeses for a unique taste.

Instructions
 

Preparation

  • Spread butter on one side of each slice of bread.
  • Spread basil pesto on the unbuttered side of two slices of bread.
  • Place cheese on top of the pesto, then cover with the other slices of bread, buttered side up.

Cooking

  • Heat a skillet over medium heat.
  • Cook each sandwich for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
  • Serve warm.

Notes

This sandwich is best served warm. Pair it with a bowl of tomato soup for a classic combination. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat until warmed through.
