Ingredients
  

For the Cookies

  • 1 Cup white chocolate chips Can use store-bought chocolate melts if short on time.
  • ½ Cup peanut butter
  • 24 mini peanut butter cups (like Reese’s dark chocolate) Upside down for assembly.
  • 24 cookies fudge striped cookies (such as Keebler) Use stripe side down.
  • 1 Packet Mini M&Ms (in red, yellow, and orange) Customize color for holiday theme.

Instructions
 

Preparation

  • Line a large chopping board or baking sheet with parchment paper.
  • In a microwave-safe bowl, melt the white chocolate chips and peanut butter together on a low or defrost setting, stirring often until smooth.
  • Transfer the mixture to a piping bag and let it cool for about 5 minutes, or until cool enough to touch.

Assembly

  • Place a fudge striped cookie, stripe side down, on the prepared baking sheet.
  • Pipe the white chocolate mixture into the center of the cookie, forming a circle about the size of a Reese’s miniature cup.
  • Gently place a miniature peanut butter cup upside down on top of the piped mixture, pressing down slightly to let the mixture ooze out.
  • Add a mini M&M on the band to mimic a buckle.
  • Repeat the process until all cookies are assembled. Allow the cookies to set completely before serving.

Notes

Store cookies in an airtight container at room temperature. Can be made in advance but allow to return to room temperature before serving. Can add crushed nuts or sprinkles for added texture and try different flavored chips for variation.
