Ingredients
  

  • 2 packages 8 oz each cream cheese, softened
  • 1/2 cup crushed pineapple well-drained
  • 1 cup sharp cheddar cheese shredded
  • 1/4 cup red bell pepper finely chopped
  • 1/4 cup green bell pepper finely chopped
  • 2 tablespoons green onions chopped (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup chopped pecans or walnuts for coating
  • Crackers pretzels, or fresh veggies (for serving)

Instructions
 

Drain the Pineapple

  • Place crushed pineapple in a fine mesh strainer or wrap in cheesecloth and squeeze out as much moisture as possible. Too much liquid will make the cheese ball soggy.

Mix the Base

  • In a medium bowl, combine softened cream cheese, drained pineapple, shredded cheddar cheese, chopped bell peppers, and green onions. Add garlic powder and black pepper. Mix thoroughly using a spatula or hand mixer until well combined.

Shape the Cheese Ball

  • Scoop the mixture into the center of a large piece of plastic wrap. Gather the edges and shape into a ball. Wrap tightly and refrigerate for at least 1 hour to firm up.

Coat with Nuts

  • After chilling, unwrap the cheese ball and roll it in chopped nuts until completely coated. Press the nuts gently into the surface to help them stick.

Serve

  • Place on a serving plate and pair with your favorite crackers, pretzels, or fresh veggie sticks. Garnish with a sprig of parsley or a ring of pineapple for a festive touch.
