  • 1 cup crushed pineapple, drained Be sure to drain well to avoid a runny mixture.
  • 1 cup cream cheese, softened Soften to room temperature for easier mixing.
  • 1 cup powdered sugar
  • 2 cups shredded coconut Can be used for rolling the balls or additional for a nut-free version.
  • 1 cup chopped pecans Can substitute with walnuts or almonds, or omit for nut-free.
  • 1 teaspoon vanilla extract

Preparation

  • In a mixing bowl, combine the crushed pineapple, cream cheese, and powdered sugar. Mix well until smooth.
  • Stir in the vanilla extract.
  • Gradually fold in the shredded coconut and chopped pecans.
  • Chill the mixture in the refrigerator for about 30 minutes.
  • Once chilled, shape the mixture into small balls.
  • Roll each ball in shredded coconut or chopped pecans for coating.
  • Place the coated balls on a serving tray and refrigerate until serving.

Notes

Serve chilled on a platter or in cupcake liners. They can be made a day in advance and stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 1 month. Thaw in the fridge before serving.
