For the cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 3 large eggs
  • 1 cup whole milk
  • 0.5 cups unsalted butter, melted
  • 2 tsp vanilla extract

For the filling and topping

  • 1.5 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 0.5 cups powdered sugar
  • 1 cup crushed pineapple, drained
  • 2 tbsp instant vanilla pudding mix
  • 2 tbsp finely chopped pistachios
  • 2 cups whipped cream
  • 1 cup pineapple chunks
  • 0.25 cups crushed pistachios
  • to taste caramel sauce for drizzling

Instructions
 

Baking the Cake

  • Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Add eggs, milk, melted butter, and vanilla extract. Mix until smooth and creamy.
  • Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely before slicing horizontally into two layers.

Preparing the Pineapple Cream Filling

  • Beat the cream cheese and powdered sugar until smooth.
  • In a separate bowl, whip the heavy cream until fluffy peaks form, then gently fold it into the cream cheese mixture.
  • Fold in the crushed pineapple, vanilla pudding mix, and chopped pistachios until well combined.

Assembling the Cake

  • Spread the pineapple cream filling between the cake layers and over the top of the cake.
  • Pipe or spread whipped cream generously around the edges of the cake.
  • Top with pineapple chunks, crushed pistachios, and a generous drizzle of caramel sauce.
  • Chill the cake for at least 1 hour before serving to enhance the flavors and texture.

Notes

Make sure to drain the crushed pineapple well; excess moisture may affect the texture. For added flavor, consider using coconut milk instead of whole milk. You can also incorporate coconut flakes into the frosting or filling for a tropical twist.
