Ingredients
  

Dumplings and Broth

  • 1 package (12 oz) pork or chicken dumplings Use frozen if preferred
  • 4 cups low-sodium chicken broth Vegetable broth can be used for a vegetarian version

Aromatics

  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced

Vegetables

  • 2 cups fresh spinach or bok choy
  • 2 tbsp soy sauce Adjust based on salt preference
  • 1 tsp sesame oil For finishing touch
  • 2 scallions green onions, chopped for garnish

Preparation

  • Start by gathering all your ingredients.
  • In a large pot over medium heat, add a splash of oil. Sauté the minced garlic and grated ginger until they release their lovely aroma, about 1 minute.

Cooking

  • Pour in the chicken broth and bring it to a gentle boil.
  • Add the dumplings and cook until they are tender.
  • Stir in the fresh spinach or bok choy along with the soy sauce and cook until the greens are wilted, about 2-3 minutes.
  • Drizzle the sesame oil over the soup for added flavor.
  • Ladle the soup into bowls and garnish with chopped green onions before serving.

Notes

If you have leftovers, store them in an airtight container in the fridge for 2-3 days. Reheat on the stove when ready to enjoy again. For added depth, consider tossing in mushrooms or carrots alongside the greens.
