  • 12 pieces frozen or homemade potstickers
  • 4 cups low-sodium chicken broth
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 pieces green onions, chopped (plus extra for garnish)
  • 2 tablespoons low-sodium soy sauce Taste and adjust as needed
  • 1 cup sliced carrots
  • 2 cups chopped bok choy
  • 1 teaspoon sesame oil Add before serving for extra flavor

Preparation

  • Grab a large pot and set it over medium heat. Pour in the chicken broth, then add in the grated ginger and minced garlic. Let it simmer for about 5 minutes.

Cooking

  • Carefully toss in the potstickers to the bubbling broth. Cook them until they float to the top, which should take around 5-7 minutes.
  • Next, stir in the sliced carrots and bok choy. Cook these for an additional 3-5 minutes until they are tender yet still colorful.
  • Season the soup with soy sauce to your liking, making sure to taste and adjust as needed.
  • Just before serving, sprinkle chopped green onions on top and add a drizzle of sesame oil for an extra kick of flavor.

Notes

For extra flavor, consider a splash of rice vinegar or chili oil when serving. For a spicier version, add a pinch of red pepper flakes or a dash of hot sauce.
