Cookie Dough

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Filling

  • 1 cup pumpkin pie filling

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until the mixture is light and fluffy.
  • Mix in the vanilla extract thoroughly.
  • In a separate bowl, whisk together the flour, cornstarch, salt, cinnamon, and nutmeg until well combined.
  • Gradually add the dry mixture to the butter mixture and mix until thoroughly combined.
  • Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  • Use your thumb to make an indentation in the center of each ball, then fill it with pumpkin pie filling.

Baking

  • Bake for 12-15 minutes, or until you see the edges turn lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for about a week. If you'd like to keep them longer, consider freezing them for up to three months. Don’t over-mix the dough and use room-temperature butter for the best texture.
