  • 1/2 cup fresh or frozen raspberries Use ripe, sweet raspberries for best flavor.
  • 3/4 cup almond milk or coconut milk Adjust the milk type as per preference.
  • 1 tbsp maple syrup Honey or agave syrup can be used as a substitute.
  • 1/2 tsp vanilla extract
  • 1/4 cup chia seeds For creamier texture, blend the chia seeds into the pudding mixture.

Preparation

  • Blend the raspberries, almond milk, maple syrup, and vanilla extract in a blender until smooth and creamy.
  • Pour the mixture into a bowl and add the chia seeds. Whisk everything together until well combined.
  • Cover the bowl and place it in the fridge to set for at least 1 hour or overnight for best results.
  • When ready to serve, take out the pudding and add your favorite toppings.

Notes

Store in an airtight container in the fridge for about 3 to 5 days. If the pudding thickens too much, stir in a little extra almond or coconut milk before serving. Experiment with different berries or add a tablespoon of nut butter for extra creaminess.
