Raspberry Yogurt Bites

  • 1 cup raspberries Choose ripe raspberries for the best flavor.
  • 1 cup yogurt of choice (plain or vanilla) You can use dairy-free or plant-based yogurt if preferred.
  • 3/4 cup chocolate chips Optional - can substitute with peanut butter for younger toddlers.

Preparation

  • Start by mashing the raspberries in a bowl.
  • Add the yogurt to the mashed raspberries and stir until well combined.
  • Line a mini muffin tin with liners or use a silicone muffin pan.
  • Scoop the raspberry yogurt mixture into the prepared muffin tin, filling each cup about halfway.
  • Place the muffin tin in the freezer and freeze for at least 4 hours, or until the yogurt bites are completely set.
  • Once the bites are frozen, melt the chocolate chips in the microwave for about 1 minute, stirring until smooth.
  • Remove the frozen yogurt bites from the freezer and drizzle or spread the melted chocolate over the top of each bite.
  • Return to the freezer for a few minutes until the chocolate is set.
  • Once the chocolate is set, remove the yogurt bites from the muffin tin and serve immediately, or store them in the freezer for later.
  • Wait 1-2 minutes before removing the bites from the liners so the paper doesn’t stick.

Notes

Store any leftover Raspberry Yogurt Bites in an airtight container in the freezer. They will stay fresh for up to a month. Let them sit for a minute before removing them from the liners.
