Roasted Peanut Kale Crunch Salad

Ingredients
  

Salad Ingredients

  • 1 bunch kale, chopped or a bag of pre-chopped kale
  • 1 cup shredded carrots
  • 1 cup sliced cucumber or snap peas
  • 1 large avocado optional but highly recommended
  • 1/3 cup roasted peanuts
  • 1-2 cups cooked chicken, shrimp, or crispy tofu

Dressing

  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 small grated garlic clove
  • to taste warm water to thin out dressing

Instructions
 

Preparation

  • Massage the kale with a pinch of salt and a tiny splash of dressing for 30 seconds to make it more tender.
  • In a jar, add peanut butter, soy sauce, lime juice, honey, grated garlic, and a splash of warm water. Shake until well combined and adjust flavor as needed.
  • In a large bowl, toss the massaged kale, shredded carrots, sliced cucumber or snap peas, and your choice of protein together.
  • Drizzle the dressing over the salad and toss to combine.
  • Top with roasted peanuts before serving.

Notes

This salad is perfect for leftovers and can be a complete meal or a hearty side dish.
