Ingredients
  

For the Meatballs

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1 piece egg
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce

  • 2 cups beef broth
  • 1 tablespoon cornstarch Optional for thickening.

For the Garlic Herb Mashed Potatoes

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 2 tablespoons fresh herbs (like parsley or thyme), chopped

Preparation

  • In a large bowl, mix the ground beef, breadcrumbs, onion, egg, minced garlic, Worcestershire sauce, salt, and pepper until combined. Shape the mixture into meatballs.

Cooking Meatballs

  • In a large skillet, brown the meatballs over medium heat. Once browned, remove them from the skillet and set aside.
  • In the same skillet, add the beef broth and bring it to a simmer. Return the meatballs to the skillet and cook for 20 minutes, until they are cooked through.
  • If you want a thicker broth, mix cornstarch with a little water and add it to the skillet.

Mashed Potatoes

  • While the meatballs are cooking, boil the potatoes in salted water until they are tender.
  • Drain the potatoes, then mash them with milk, butter, and chopped herbs until creamy.

Serving

  • Serve the meatballs on a bed of garlic herb mashed potatoes.

Notes

For extra flavor, let the meatballs marinate in the seasonings for 30 minutes before cooking. Use leftover mashed potatoes for quick meals such as omelets or baked potatoes. Consider adding sautéed mushrooms to the gravy for richer flavor.
