Ingredients
  

  • 8 oz 225g spaghetti
  • 2 salmon fillets about 6 oz each, skinless
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 lemon juice and zest
  • 1/2 cup pasta water reserved
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley chopped (optional for garnish)

Instructions
 

Cook the Spaghetti:

  • Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.

Cook the Salmon:

  • While the pasta cooks, season salmon with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over medium heat. Cook salmon for 3-4 minutes per side until cooked through. Remove salmon and flake it into large chunks.

Make the Sauce:

  • In the same skillet, add 1 tablespoon olive oil and minced garlic. Sauté for 1 minute until fragrant. Stir in butter, lemon juice, lemon zest, and reserved pasta water. Simmer for 1-2 minutes.

Combine:

  • Add the drained spaghetti to the skillet. Toss well to coat the pasta with the lemon garlic sauce. Gently fold in the flaked salmon.

Serve:

  • Garnish with fresh parsley and extra lemon zest if desired. Serve warm!
