  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet.
  • Add sausages to the baking sheet with the sweet potatoes.
  • In a small bowl, whisk together honey, minced garlic, and soy sauce.
  • Drizzle the sauce over the sausages and sweet potatoes on the baking sheet.

Cooking

  • Bake in the preheated oven for about 25-30 minutes, or until sweet potatoes are tender and sausages are cooked through, stirring halfway through.
  • Remove from oven, garnish with fresh parsley if desired, and serve warm.

Notes

For extra flavor, try using different types of sausages such as spicy or herb-flavored. You can adjust the sweetness by adding more or less honey based on your taste. Don’t skip stirring halfway through baking; this helps the sweet potatoes cook evenly and get crispy. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through. If you have a lot of leftovers, you can also freeze the dish for up to a month.
