Ingredients
  

  • 3 cups all-purpose flour or substitute with whole wheat flour for a denser loaf
  • 1 cup rolled oats plus extra for sprinkling on top
  • 2 ¼ tsp active dry yeast one packet
  • 1 ½ tsp salt
  • 1 tbsp honey or maple syrup for a vegan option
  • 1 cup warm water 110°F to 115°F
  • ¼ cup mixed seeds sunflower, sesame, flaxseeds, poppy seeds, or chia seeds
  • 1 tbsp olive oil for kneading and brushing on top

Instructions
 

Step 1: Prepare the Ingredients

  • Start by gathering all your ingredients. Warm the water to about 110°F to 115°F to activate the yeast. In a small bowl, mix the yeast, honey, and warm water. Let it sit for 5-10 minutes until it becomes foamy.

Step 2: Mix the Dough

  • In a large bowl, mix the flour, rolled oats, and salt. Pour in the yeast mixture and stir until the dough begins to form. If it’s too dry, you can add a tablespoon or two of water. If it’s too sticky, sprinkle a little extra flour.

Step 3: Knead the Dough

  • Once the dough is mixed, transfer it to a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. If you have a stand mixer with a dough hook, this process is much easier and quicker!

Step 4: First Rise

  • Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours, or until it has doubled in size.

Step 5: Shape the Dough

  • After the dough has risen, gently punch it down to release any trapped air.Shape the dough into a loaf by folding the sides inward and rolling it into a log shape. If you prefer a freeform loaf, you can shape it into a round or oval.

Step 6: Second Rise

  • Place the dough in a lightly greased loaf pan (or on a baking sheet if making a freeform loaf). Cover with the towel again and allow it to rise for another 30-45 minutes.

Step 7: Bake the Bread

  • Preheat your oven to 375°F (190°C). Brush the top of the dough with olive oil and sprinkle the mixed seeds and extra oats over the top. Bake for 30-35 minutes, or until the loaf develops a golden-b
