  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 pieces carrots, diced
  • 3 stalks celery, diced
  • 1 piece onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 leaves bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Preparation

  • Start by searing the chicken in a hot skillet until it gets a nice golden brown color to enhance the flavor of your stew.
  • Place the seared chicken, diced vegetables, potatoes, minced garlic, and bay leaves into your slow cooker.
  • Sprinkle the thyme, salt, and pepper over everything, and stir well to mix the flavors.
  • Pour in the chicken broth. If using flour to thicken, whisk it with a bit of broth or water first before adding it in. Alternatively, you can sprinkle it over and stir.

Cooking

  • Cover your slow cooker and set it to cook on low for 6–8 hours or on high for 3–4 hours, until the chicken and vegetables are tender.
  • Once done, remove the bay leaves, taste, and adjust the seasoning if needed. Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, consider adding herbs like rosemary or basil. You can also add other vegetables like peas or green beans. For a creamier stew, add a splash of heavy cream or coconut milk just before serving.
