  • 1 lb ground beef Cooked until browned
  • 4 large potatoes, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice) Sprinkled on top before serving

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Optional garnish

  • chopped green onions For garnish

Preparation

  • Cook the ground beef in a skillet over medium heat until browned. Drain off any excess fat.
  • Transfer the cooked beef into the slow cooker.
  • Layer the diced potatoes evenly over the ground beef, then add the black beans and corn on top.
  • In a separate bowl, combine the cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Pour this mixture over the ingredients in the slow cooker.

Cooking

  • Cover and let it cook on low for 6-8 hours, or until the potatoes become tender.
  • About 30 minutes before serving, sprinkle the shredded cheese on top and cover again until it has melted.

Serving

  • Garnish with chopped green onions before serving hot.

Notes

For extra flavor, consider adding diced bell peppers or jalapeƱos. Use leaner ground meat like turkey if desired. Stir the mixture occasionally while cooking for even flavor distribution. Can be frozen for up to 3 months.
