Main Ingredients

  • 2 pounds beef chuck roast
  • 8 cloves fresh garlic, minced
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup beef broth Ensure it's low sodium for a healthier option.
  • 1 large onion, thinly sliced
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme Don't skip this for added flavor.

Preparation

  • Chop the onions and mince the garlic.
  • Season the beef roast with salt and pepper all over.

Searing

  • In a skillet over medium heat, melt half of the butter.
  • Sear the roast on all sides until it’s nicely browned.

Cooking

  • Transfer the roast to a slow cooker and add the sliced onions and minced garlic around it.
  • Pour in the beef broth until the meat is barely covered.
  • Place the remaining butter on top and sprinkle the dried thyme over everything.
  • Cover the slow cooker and cook on low for about 480 minutes (8 hours) or high for 240 minutes (4 hours) until the beef is tender.
  • Before serving, shred the beef in the slow cooker using two forks for a melt-in-your-mouth texture.

Notes

Serve over mashed potatoes, egg noodles, or rice. Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
