  • 2 cups Corn Fresh grilled, frozen, or canned corn.
  • 4 oz Cream Cheese Can use vegan alternatives like Tofutti or Kite Hill.
  • 1/3 cup Cotija Cheese Feta works as a substitute.
  • Juice of 1 lime Lime Freshly squeezed preferred.
  • 2 cloves Garlic Minced; jarred can be used.
  • 1/2 tsp Chili Powder Chipotle or cayenne can be used for more heat.
  • 1/2 tsp Smoked Paprika Adds a nice smokiness.
  • 1/2 tsp Onion Powder
  • To taste optional Fresh Cilantro For garnish.

Instructions
 

Preparation

  • Start by placing the chicken in the slow cooker.
  • Add the corn, cream cheese, Cotija cheese, lime juice, garlic, and all the spices.

Mixing

  • Stir everything gently to combine the ingredients, ensuring the chicken is well-coated.

Cooking

  • Cover the slow cooker and set it on low for about 6-7 hours, or on high for 3-4 hours until the chicken is tender and cooked through.

Serving

  • Once cooked, shred the chicken right in the slow cooker with two forks and mix it back with the creamy sauce.

Notes

You can serve it over rice, in tortillas, or on a bed of salad. Sprinkle with fresh cilantro and extra lime juice before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for about three months.
