  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground ginger

Wet Ingredients

  • 0.5 cups vegetable oil
  • 2 large eggs preferably at room temperature
  • 1 cup pure pumpkin puree canned or fresh

Filling

  • 4 oz cream cheese, softened
  • 0.25 cups powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  • In a bowl, mix together flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • In another bowl, whisk together oil, eggs, and pumpkin puree.
  • Mix wet ingredients into the dry ingredients until just combined.
  • In a separate bowl, mix the softened cream cheese with powdered sugar until smooth.

Assembly

  • Fill each muffin liner with a layer of batter, followed by a dollop of the cream cheese mixture, and then top with more batter.

Baking

  • Bake for 18-20 minutes or until a toothpick comes out clean.
  • Allow to cool before serving.

Store muffins in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Freeze for up to 3 months, thaw at room temperature before serving.
